In light of the holiday spirit, we’d like to share with you the “Cheesiest” rendition of the Night Before Christmas you’ve probably ever read.

Twas the Week Before Christmas

Twas the week before Christmas and all through the Cheese Plant,
Pasteurized Milk was gently coagulating in the Cheese Vats.
The curd was stirred, cut, cooked, drained, and treated with care,
Then formed into blocks, wheels, and logs for Cheese Lovers to share.

Packaging equipment hummed and whirled through the night,
While inspection equipment ensured all the product was just right.
The packaged cheese then went into the cooler with care,
Knowing that delivery trucks would (hopefully) soon be there.

The cheese then journeyed to a Distributor or Retail Store,
Where it is unloaded, unpacked, and stocked to keep cool.
The grocery shelves were stocked with a diversity of cheese,
While customers shopped and dreamed of holiday recipes.

This Christmas season we are especially thankful,
For all the Dairy Processors, Producers, and Value Chain Suppliers.
They are all dairy heroes that worked through the Pandemic Crisis.

Don’t forget to leave Cheese out for Santa to spread Christmas Cheese cheer,
Rumor is he likes Waxed Cheese aged two or more years.
